Giant cupcakes, anyone? If you are in party mood like I am lately, you would probably love to have a giant cupcake. What about a perfect chocolate cupcake? Its loaded with tons of Mars bars and chocolate caramel goodness! These giant cupcakes are definitely a chocolate lover’s dream. If you love Mars bars, chocolate bars, Milky Ways, you got to be super excited to see this giant cupcake. I certain do, check out all my favorite Mars bars here.

Talking about giant cupcakes, do you know how big the largest cupcake in the world weighs? You will be surprised! Well, the biggest cupcake in the world weighs ONE TON (no kidding!) and is recorded in the Guinness World Records in 2012 as the largest cupcake in the world. I wonder how much it took to make this cupcake! Certainly more than a few cups of flour, or buttercream for this matter.

So how much buttercream did it really take to frost this ginormous cupcake? Well, after mixing all the ingredients together and doing a bunch of calculations, we finally got the answer. 600 pounds!!! A full 600 pounds of buttercream was used to frost this cupcake. But that’s not all. Now imagine the cupcake topped with big Jawbreaker candies as sprinkles. That’s a hell lot of candy! Have you ever used a giant jawbreaker on your cupcakes? Probably not. That tells how big this cupcake really is.

  Peppermint Mocha Cupcakes

Make your Starbucks Peppermint Mocha richer, better and in a cupcake form. Yes, I went there and I’m betting you will too. It’s hard to beat a moist chocolate espresso cupcake with chopped bits of Andes Peppermint bits throughout for a bite of coffee and peppermint in one. To top it all is a soft mousse-like Swiss meringue buttercream infused with some peppermint. Then of course I went my usual cupcake carving way and finished it loudly with some chocolate drizzle and more chopped Andes and a peppermint candy on top.
Call me crazy, but I absolutely love and aniticipate the annual return of Starbuck’s Peppermint Mocha with the same fervor of a McRib fanboy. The annual re-introduction of them triggers all things holiday in me – you know all the jolly things that makes your belly jiggle from over indulgence and your face smile with delight.
So when I saw Andes Peppermint Patties in Target the other day, I knew exactly what I was making with them first. Behold a decadent cupcake stacked high and wide with lots of goodness.
Think of it as a way to condition your stomach for the holiday food fest to come. That’s what we did.

The Story:
I live in a college town where “Dessert Parties” are the activity of choice on a Sunday night.  It’s a chance for the ladies to show off their homemaking skills and for the men to indulge in sweets and to flirt with a flock of single coeds.  Does it sound a little…bizarre?  We know.
Somehow I was in charge of providing 200 cupcake for Sunday’s gathering, and these cupcakes were gone within the first 20 minutes.[end-story]

I could watch sappy chick flicks all day long with a box of Kleenex and a cozy blanket.
Playing matchmaker is my new favorite hobby.
I save all the cute little notes and trinkets boys give me.
And I love helping my friends plan their weddings, bridal showers, receptions and I always cry watching their first dance as husband and wife.

Birthday Cup Cakes



  Cutie Hello kitty cupcakes

You could not have imagined my excitement when I first found the perfect Hello Kitty cookie cutter in the Little Tokyo area of Downtown L.A. I finally had the reason to use it to create these edible kitty heads out of gum paste to top this girly, fun cupcake. 

The cupcake flavor is "pink velvet" and was made from a recipe I found off of this blog. I had tried a couple of pink velvet cupcake recipes using buttermilk and cocoa powder, but the color was consistently off, so I decided to go for this version, which is more like a white chocolate flavored pound cake. Each cupcake is stuffed with white chocolate cheesecake filling and raspberry sauce, and then topped with raspberry buttercream. Since these cupcakes have several steps and the cheesecake takes a few hours to set, I would recommend making the cheesecake the night before you bake and assemble the cupcakes.





To assemble:

Once cupcakes are fully cooled (it helps to refrigerate them after they've cooled a bit out of the oven), core the center of each one out. Pour about a tsp of raspberry sauce into the core. Next, fill the core with a couple of spoons of cheesecake filling, pushing down on the filling with a spoon or wax paper. I highly recommend using wax paper or parchment paper to press in the filling because it's sticky and hard to press in otherwise. Top the cupcakes with another spoonful of raspberry sauce. Last, frost the cupcakes with the raspberry buttercream and top with Hello Kitty heads/pink sprinkles.

To make the Hello Kitty Cupcake Toppers:


I used gum paste because I was not in the mood to make a batch of marshmallow fondant. If you have a Hello Kitty cookie cutter, it makes this step MUCH easier. Otherwise, you can trace a picture of Hello Kitty onto a piece of wax paper and cut out the fondant with a paring knife. Once the Hello Kitty heads are cut, set aside and allow to dry by placing them on a flat container loosely covered with wax or parchment paper (it's best if you make the heads a night or two before, so that they have sufficient time to dry). 

I used AmeriColor edible food pens to draw on Hello Kitty's face and bow. You should allow them to dry after coloring for at least 30 minutes.

PINKY CUP CUKES

This cup cakes usually, we made it for our customer who want this design for their caremony of wedding, or else anniversarry and also for dowry. Its depends on our customer 



My advice on making creative cupcakes is to collect ideas, colors, and patterns from anything that grabs your attention. Also have a good selection of dyes. I mainly uses red, yellow, blue, green, black, brown, and purple, and can mix any other color she might need from those. For icing, I uses roll fondant for most of the decorations and royal icing for the piping. She recommends trying different brands of fondant to find a good one, because some “taste like gelatin.”
